UDON (Japanese noodles) Recipe

Hi, I am Laarnie and today I will show you how to make your own Udon (Kakejiru).

To make this simple Kakejiru Udon, you will need:

For the toppings:

200g pork/beef (bacon-like cut)

Mirin 40cc

Mentsuyu 40cc

Ginger juice

1 medium size onion (if you prefer onion than scallions for topping)

Scallions (small cuts for topping, as prefered)

Nori

Tempura or Ebi fry

Saute the meat in a non-stick pan and add Mirin, Mentsuyu and Ginger juice.

Bring to boil and add Onion.

Simmer until the broth is reduced significantly.

For the soup:

1 liter water

Hondashi

40cc Mirin

Mentsuyu 40cc

Soy sauce 20cc

Togarashi (as preferred)

Bring 1 liter of water to boil with Hondashi.

Take out the Hondashi and add Mirin, Mentsuyu, Soy sauce.

Add the Udon noodles and bring to boil.

Put some Udon noodles in a bowl and add enough soup.

Put some of the sauteed meat for topping and add Ebi fry.

And Nori, Scallions and some Togarashi as preferred.

Serve hot.

First and foremost, let me thanks everybody for all of your sweet thoughts and prayers.

We were finally home yesterday. The li'l guy was sent home as he's already out of danger of dehydration. He still has the Rotavirus so we are not allowing any visitors just to make sure we won't be spreading the virus.

We arrived home at around 3PM and the first thing we did was take a shower. I then started the disinfection frenzy. I loaded the washing machine and the dryer 7 times yesterday. There are still 3 loads waiting for me this morning. While the washing machine and the dryer were doing their work, I disinfected the whole house except for the bathroom and kitchen which I have to finish today. I was tired, yes, but we were craving for some chicken soup, so I made some.

My princess was longing for some cookies so I made a batch of jimmies-topped cookies for her and raisins-topped cookies for the adults.

I used some of the cookie dough to make cookie cups which I filled with the italian meringue frosting I made. The meringue was so good with the strawberries! YUM! ^^)

You can tell that I missed my kitchen ^^)

I did promise to draw the Petitor Jewelry winner last night but I was so tired I slept like a log except that I had to wake up a few times to accompany the lil guy to the bathroom.

So, I woke up light-headed and tired, my body felt like lead. But there are so many thing to be done. But I also woke up craving for some comfort food. So I made some of these Raisins Cinnamon Rolls for breakfast. We love it as is, no frostings!

While I was waiting for the dough to rise, I decided to take a quick shower. I still don't know what came over me, must be because I was tired and I wasn't thinking clearly... but there are things that you just do without further contemplation... I cut my hair really short. When I couldn't reach the back of my head anymore, I asked for my husband's help. He was quite shocked but then I told him "Will you do it or I'd have to do it all by myself?" He did help me shave the back of my head.

When I got out of the bathroom, the lil guy told me "Wow, mami! you look so pretty!" while the princess cried and said "What happened to your hair! I don't want a short hair! don't cut my hair short, ok?".

After a little while she then told me "It isn't so bad after all, mami!" ^^)

And oh, yes, I have my pjs on! PJs rock! ^^)
